Poaching, simmering and blanching read the same water and aim at three different states. That is exactly what “simmer”, on its own, never tells you.

A step’s “until” clause is kept word for word. We never add a number to it to make it look tidy.
A technique whose tell has no honest drawing gets none. An approximate drawing reads as a measurement.
Who’s behind it

I’ve been building software for a living for eight years now, and I’ve been cooking since I was a kid. At ten I could bread a cutlet à l’anglaise: flour, egg, crumbs. I thought it was the best trick in the world. Since then I’ve spent hours on cooking videos. A lot of hours. Too many, some would say.
What I like making: pizza, fresh pasta, my own broth, my own soups. Things that take time and don’t forgive much.
What I’m done doing: wondering what to make for dinner. Every day. Improvising is fine when you’re allowed to get it wrong. But it’s six o’clock, there are people to feed, and you get one try. Improvising runs out fast.
Rikaido is my answer. An app for people who want to learn to cook without reading books or spending their evenings on videos. It teaches you while you cook, not before. Ask it for any recipe and it hands it over, checked. You run out of ideas. It doesn’t.
I’m on my own with this. No team, no office. If something’s off, I’m the one reading your email.
