A short rest — ten to twenty minutes — between shaping steps, with the dough loosely covered.

Why it works
Gluten that has just been worked is under tension and fights back; roll it now and it shrinks the moment you let go. Left alone, those bonds slowly rearrange and release, and the same dough rolls out easily and stays where it is put.
The tell
Press a finger in: at the start the dent springs straight back, after the rest it stays. That is tension gone.
How it fails
Forcing a springy dough thinner instead of waiting tears the gluten and the shape pulls back anyway during baking. Waiting is genuinely faster than fighting it.
