Spatchcocking

Cutting the backbone out of a whole bird and pressing it flat before roasting.

Why it works

A whole bird is a bad shape for an oven: the legs need far longer than the breast, but they sit tucked in the shade while the breast faces the heat. Flattened, both face the same heat at the same distance, and the whole thing cooks in roughly a quarter less time.

The tell

The breastbone gives with an audible crack when you press, and the bird lies flat without springing back up.

How it fails

Kitchen scissors and a firm cut down each side of the backbone; a knife slips on bone. Keep the backbone — it is the best part of the gravy, and throwing it out is the only real waste here.
