Lifting one side of a resting dough, stretching it up, and folding it over the top — a few times round, every half hour during the rise.

Why it works
It builds the same gluten network kneading does, but in seconds instead of minutes, and without pressing out the gas already generated. For wet doughs that would simply glue themselves to a bench, it is not an alternative to kneading — it is the only practical way.

The dough resists more with each round and holds a domed shape in the bowl instead of spreading flat.

How it fails
Folding a dough that has gone slack and soupy means it is overfermented, not underworked, and more folds will not fix it. Wet your hand rather than flouring it — flour worked in this late shows up as dry streaks in the crumb.
