Cutting on the bias

Slicing across at an angle instead of square, so each piece is an oval rather than a disc.

Why it works

The angle is free surface area. A carrot cut on a steep bias has nearly twice the face of the same carrot cut straight across, so it browns faster and takes on sauce better without being cut any thinner — which matters because thinner also means limper.

The tell

Each slice is clearly longer than it is wide, and stood on the board it wants to fall over rather than stand like a coin.

How it fails

Losing the angle halfway down the vegetable, which is what happens when the knife follows your wrist instead of the board. Turn the vegetable, not the knife, and check every few slices that the ovals still look the same.
